We were fortunate to be invited to the sugar shack again this spring, to celebrate the new season. Spring is not particularly my favorite season, it seems as though I am constantly running after the kids wiping up mud behind them. But... there are some definite things I love about spring.... the warmer air.... the longer days... the sun!.... and most recently...the sap that runs from the maple trees and all the wonderful things it produces.
I used to hate anything maple flavoured, but now I realize the syrup, candy etc were so full of sugar and artificial sweetners... Now that I have had the taste of the real thing, I realize how wonderful it really is, and have developed quite the taste for 'the real thing'. It amazes me that from the sap, that you can boil it to make so many wonderfully, naturally tasting things! ... You have to try it to believe it, and trust me, if I could send packages of maple cream in the mail to each of you, I would
(By the way... You better hurry up and get here Nancy, I do have some maple cream in the fridge, I will try to save some for you to try!!!!)
Here are a few pictures of our celebration of nature and the new season...

It was a BEAUTIFUL DAY.... +15 degrees, and everything was melting, and fresh! This is the snow sliding off his roof...

It has been a great year so far... Uncle Albert has already made 7-8 gallons of syrup... at 40 gallons of sap to 1 gallon of syrup, things are pretty good!

Any sap Shaun?

Uncle Albert added on to his 'shack' last summer (the blue part is new)... this is the back side, with the door leading to his 'fridge'... the snowbank!

We were teasing Shaun there was a sasquatch in the trees... he had to ask Uncle Albert about it!

Shaun loved the Maple toffee... Alexa didn't even try it! ... It's the only time we're allowed to eat yellow snow!

My cousin Anie and her friend were up for the weekend- it was nice to see her again!

YUMMY.... Maple Cream.... Alexa took a while to warm up to the idea, but once she started, she didn't stop!! (they whisk the syrup after it was boiled for the toffee on the snow... and voila... cream... well, it's more like icing... but so good!!)
